This weekend we stopped by Gunpowder Bison and Trading Ranch in Monkton MD. I’ve been buying bison from Gunpowder for about a year at the Farmers’ Market in Washington DC. However, this was the first trip we’ve made to the farm.
Gunpowder’s retail store is really nice. In addition to their signature bison meat products, they also stock sauces, rubs, leather goods, clothing and a variety of decorative items. But what really caught my eye was their newest product. Gunpowder is now selling Berkshire pork. The Berkshire pig is a heritage breed that originated in England, and pork from these pigs is prized for its juiciness, flavor and tenderness. It’s highly marbled, and the fat content makes it perfect for low temp smoking.
As we left the farm, I stopped to take pictures of a few bison grazing. They are really impressive animals.
We brought home a rack of bison ribs, a rack of Berkshire pork spare ribs, and a Berkshire pork bone-in Boston butt. I’m cooking the pork ribs this weekend and will report on how they come out.
