Bite through chicken on the Traeger Lil’ Tex

Last night I cooked some really nice chicken on my Traeger Lil’ Tex Elite.  I’ve been using the Traeger as a test bed for recipes and techniques because it’s so easy to use, but I’m beginning to wonder if this might be a good competition cooker for chicken.

 

I would’ve been happy to put this chicken in a turn in box for competition, which is encouraging because I didn’t really expend much effort on the prep at all.  From the ten pieces I cooked I had maybe five pieces that were “box-worthy”.

Since this was  a home cook, I decided to try something new.  I picked up some of Myron Mixon’s Huney Muney Cluck Rub at the Safeway National Capital BBQ Battle last weekend, so I was looking forward to trying it out.  Myron has a winner here.  Nice sweetness, with a savory note that goes really well on chicken.

We’re getting ready to leave in a few hours for New York City with Heath and Brett of Pork Barrel BBQ to prepare for our appearance on Fox & Friends tomorrow.  Hope you can tune in to Fox News Network to see us (or DVR/TiVO if you aren’t a morning person).  The program runs from 6:00 AM-10:00 AM, and we’ll be doing several short segments over the course of the morning.
